A carnival classic stuffed with pasta and cheese and topped with ketchup chips.
Directions for: Cranked Up Carnival Corn Dog
Ingredients
Batter1 cup yellow cornmeal
1 cup flour
tsp salt
⅛ tsp black pepper
cup sugar
4 tsp baking powder
cup ketchup chips, crushed fine
1 egg
1 cup milk
The Corn Dog3 jumbo hot dogs
1 elbow pasta
1 Tbsp butter
2 Tbsp flour
2 cups whole milk
3 cups Cheddar cheese
cup flour
1 cup ketchup chips
3 Popsicle sticks
4 cups caramel popcorn
Directions
Batter1. In a medium bowl combine cornmeal, flour, salt, pepper, sugar, baking powder, and ketchup chips. Stir in egg and milk. Place in fridge 1-2 hours before using.
The Corn Dog1. Take a jumbo hot dog and cut a V-shape lengthwise, try to not tear hot dog skin. Set the cut off part to the side. Use a melon baller to scoop out some of the meat. Repeat for remaining two hot dogs.
2. In a medium pot bring water to a boil, season with a pinch of salt. Add elbow pasta and reduce to medium heat. Stir occasionally until fully cooked, about 8 minutes. Strain pasta and rinse, leave to the side.
3. In a saucepan melt butter. Slowly add the flour to the butter. Stir until it starts to bubble, about 3 minutes. Add a little bit of milk at a time, until its fully incorporated. Reduce to low heat and add cheese. Stir until completely melted. Add elbow pasta and stir. Remove from heat and season with salt and pepper.
4. Once the macaroni and cheese is cooled, scoop it into the jumbo hot dogs. Place the cap back on the hot dog and press in.
5. Wrap the hot dog tightly with plastic wrap and place in the fridge for 6 hours.
6. Take the hot dog and lightly roll each piece in flour, insert Popsicle stick into one end of the roll. Remove corn dog batter from the fridge. Dip a hot dog into the batter, covering completely.
7. In a shallow pot warm up 4 cups of oil to 425F (220C). One at a time carefully place into oil. Slowly lower into the oil so that the outside properly crisps up, and then lower the rest into the oil. If you place it in at once, it will stick to the bottom of the pot. Cook until golden brown, approximately 5-8 minutes. Once removed roll in crushed ketchup chips.
8. Place the corn dog on a bed of caramel popcorn. Add extra ketchup chips on top. Serve.
