Seriously Im this close to moving to Nashville! This recipe was inspired by my current status: single. Im not that bitter or that lonely or any of that crazy stuff people think when someone is 30-something and single. Im just patiently single and I am comfortably staying that way until I find a real man. You know, a man that opens the door for me even though I say I dont need him to. A man proud to have me on his arm. I believe these men may exist in Nashville (and by these men I mean Tim McGraw). Who wants to take a road trip to find out?

Directions for: Cowboy Cookies
Ingredients
cup sugar
cup brown sugar
cup butter, softened
1 tsp vanilla extract
2 eggs
1 cup all purpose flour
1 cup quick cooking oats
1 tsp baking powder
tsp baking soda
tsp salt
cup semi-sweet chocolate chips
cup peanuts
15 individual caramels, cut into small pieces
Directions
1. Preheat oven to 375F (175C)
2. In a large bowl combine sugars with butter; beat until light and fluffy.

4. Add flour, oats, baking powder, baking soda, and salt; mix well.
5. Stir in chocolate chips, peanuts and caramel pieces.
6. Roll into 1-inch balls. Place two inches apart on lined cookie sheet. Flatten with fingers. Bake in the preheated oven for 10-12 minutes. Let cool. When cooled store in an airtight container.
