These cookies make the perfect anytime snack.
Directions for: Chocolate Honeycomb Cookies
Ingredients
Honeycomb1 cup sugar
cup honey
1 Tbsp baking soda
1 Tbsp vanilla
Chocolate cookies1 cup all-purpose flour
cup cocoa powder
tsp baking soda
1 egg
1 cup fine raw sugar
1 tsp vanilla extract
cup unsalted butter, melted
Fleur de Sel
Directions
Honeycomb1. Making the honeycomb: Line a baking sheet with parchment paper and lightly butter. Heat a saucepan on medium and add sugar and homey. Stir until dissolved and a candy thermometer reaches 300F. Remove thermometer and add baking soda and vanilla extract. Whisk. Once the mixture begins to puff, about 30 seconds, pour it out in a flat layer onto the baking sheet. Let harden for 30 minutes.
2. Preheat the oven to 400F
Chocolate cookies1. Making the chocolate cookies: In a bowl throw flour, cocoa powder, and baking soda. Whisk until combined. Set aside. To a stand mixer add egg, raw sugar, and vanilla extract. Mix on high speed for three minutes, until smooth and thick. Turn down to low speed and slowly stream in melted butter. Add dry ingredients and mix on low until fully incorporated.
2. Line a sheet with parchment paper and add heaping tablespoons of dough 2 to 3 inches apart. Bake for 7 minutes. Cool on baking sheets a few minutes. While cookies are still soft, add crumbled honeycomb and press into the cookies. Sprinkle with a pinch of fleur de sel.
