Chewy Double Ginger Spice Cookies - ★Cooking Recipes★

The double ginger in these cookies comes from ground ginger and crystallized ginger and gives these treats a tasty boost of flavour. Courtesy of Alison Kent.

Ingredients

cup (175 mL) unsalted butter, softened

1 cup (250 mL) packed brown sugar

1 egg

cup (50 mL) fancy molasses

1 tsp (5 mL) vanilla extract

2 cup (500 mL) all-purpose flour

2 tsp (10 mL) each baking soda and ground ginger

1 tsp (5 mL) ground cinnamon

tsp (2 mL) each salt and ground cloves

tsp (1 mL) pepper

cup (125 mL) crystallized ginger, chopped

cup (75 mL) granulated sugar

Directions

1. In large bowl and using electric beaters, beat butter with brown sugar until fluffy. Beat in egg, molasses and vanilla until smooth.

2. In separate bowl, whisk flour, baking soda, ground ginger, cinnamon, cloves, salt and pepper; stir into molasses mixture in two additions. Fold in crystallized ginger.

3. Scoop by tablespoonfuls and roll into balls. Roll in granulated sugar to coat. Place, about 2 inches (5 cm) apart, on parchment paper-lined or greased baking sheets.

4. Bake in preheated 350F (180C) oven until flattened and firm, about 12 minutes. Let cool on pans on rack (store in airtight container for up to 10 days).
