Four variations of bacon: chocolate pistachio, bacon, strawberry preserve bacon, lemon and herb bacon and cinnamon and brown sugar bacon.

Ingredients
Bacon1 pkg thick-cut bacon
Chocolate Pistachio Baconcup semisweet chocolate
1 Tbsp butter
cup pistachios, crushed
Strawberry Preserve Bacon1 cup strawberry jam
cup water
packet gelatin
Lemon and Herb Bacon1 cup corn syrup
cup warm water
2 sprigs rosemary, finely chopped
2 sprigs thyme, finely chopped
lemon, zested
Cinnamon and Brown Sugar Bacon2 Tbsp brown sugar
2 Tbsp cinnamon
Directions
Bacon1. Preheat oven to 400F (205C).
2. Place bacon on baking sheet and cook for 15-20 minutes. Cool the bacon and cut them into halves. Place the bacon on paper towels to draw out the bacon fat.
Chocolate Pistachio Bacon1. Place chocolate and butter in a bowl and microwave for 1 minute or until chocolate is fully melted. Dip 4 pieces of bacon in chocolate, and then crust the pieces with pistachios. Place in fridge to cool and set.
Strawberry Preserve Bacon1. Place the jam and water in a pot and bring to a boil. While its heating, bloom the gelatin as per the packets directions. Add it to the jam, remove from heat, and let the mixture cool for 5 minutes at room temperature. Dip 4 pieces of bacon in the strawberry preserve and place in fridge.
Lemon and Herb Bacon1. Whisk together corn syrup and lukewarm water. In a small bowl combine rosemary, thyme, and lemon zest. Dip 4 pieces of bacon in corn syrup and tap off excess. Cover with the herb mixture. Place in fridge.
Cinnamon and Brown Sugar Bacon1. Mix together brown sugar and cinnamon. Dip bacon in the same corn syrup and water mixture used for the lemon and herb bacon. Then dip into the brown sugar and cinnamon mixture. Place in fridge.
2. To serve, put one of each kind of bacon together to create one serving.
