This delicious eggs Benny recipe also features pulled pork, honey-glazed ham, hollandaise sauce and homemade biscuits.

Ingredients
Homemade Biscuits2 cups flour
1 tsp sugar
1 Tbsp baking powder
1 tsp salt
8 Tbsp butter, cubed
cup milk, plus extra for wash
Poached Eggs3 cups water
cup white vinegar
8 eggs
Hollandaise Sauce4 egg yolks
1 Tbsp freshly squeezed lemon juice
cup unsalted butter, melted
cup maple syrup
1 pinch salt
Assembly2 cups pulled pork
4 slices honey-glazed ham
Red pepper flakes
1 sprig dill
Directions
Homemade Biscuits1. Preheat oven to 350F (175C).
2. Combine flour, sugar, baking powder, and salt together. Cut butter into mixture until it begins to look like cornmeal.
3. Make a well with flour mixture and slowly add milk into the middle. Knead the dough and add more milk as needed.
4. On a lightly floured surface, roll out to desired thickness. Cut with a small biscuit cutter. Brush the tops of each biscuit with milk. Place on baking sheet and cook for 15-20 minutes.
Poached Eggs1. Bring water and vinegar to a boil, reduce heat to a simmer.
2. Crack each egg separately into a cup or bowl. Very gently add 1-2 eggs to the pot. Using a spoon gently stir in a circular motion to prevent the eggs from sticking to the pot.
3. After 2-4 minutes, the eggs should be done. Remove and place on paper towel. Repeat for remaining eggs.
Hollandaise Sauce1. In a stainless steel bowl, vigorously whisk together the egg yolks and lemon juice until the mixture is thickened and doubles in volume. Place the bowl over a saucepan containing a small amount of simmering water (the water should not touch the bowl). Continue to whisk the egg/lemon rapidly. Dont let the eggs get too hot or they will scramble. Slowly drizzle the melted butter and continue to whisk until the sauce doubles in volume again.
2. Remove from heat and whisk in maple syrup and salt. Set aside.
Assembly1. Slice each of the biscuits in half, horizontally. Place pulled pork and honey glazed ham on each. Top with a poached egg and hollandaise sauce. Garnish with red pepper flakes and a sprig of dill.
