Directions for: The Lobotomizer
Ingredients
1 box pancake mix (add water type)
cup malt powder
1 lb(s) diced and cooked side bacon
20 oz grated aged cheddar
12 eggs
2 oz hot sauce
1 bunch green onions, sliced thinly
maple flavoured table syrup (real maple syrup just isn't the same in this dish)
Directions
1. Bring 1 box of pancake mix together using the manufacturers instructions, less 20% of the water.v
2. Mix malt powder in thoroughly, but do not over mix or the pancake will not rise properly.
3. Let the mix rise for 10 minutes, and then knock it down by whisking it lightly (batter will be stable for at least 6 hours, possibly overnight depending if the mix has double acting baking powder).
4. Pre-heat your griddle to medium-hot, and your oven to 300 degrees Fahrenheit.
5. Place a baking sheet covered with parchment paper in the oven.
6. Place 4 ounces of diced bacon onto two places on the griddle. Leave 8-inches of space at a minimum between each portion of diced bacon.
7. Once the bacon begins to sizzle, portion 9 10 ounces of malted pancake batter on top of the diced bacon (about 2 standard ladles of mix).
8. Allow the pancakes to cook for 1 minute, then sprinkle 2.5 ounces of aged cheddar cheese on top of the pancake, allow to cook for 1 minute more, or until the edges start to curl.
9. Flip pancake using two large spatulas, if the pancake cracks or breaks it is not an issue, the still moist pancake batter will fuse itself back together, as long as you push it back into form.
10. Sprinkle 2.5 ounces of aged cheddar cheese on top of the cooked side of the pancake.
11. Once the cake is cooked, transfer them to the waiting cookie sheet in the oven.
12. Repeat steps until all the pancakes are cooked and you are ready to move to the eggs.
13. Fry the eggs over easy on medium heat. (For larger groups poaching them will also work just make sure the yolks are runny).
14. With the eggs cooked and held warm, place one pancake from the cookie sheet onto each persons plate.
15. Place three eggs on each pancake, centred right in the middle.
16. Portion about an ounce of hot sauce over the eggs.
17. Garnish with 2 ounces of aged cheddar cheese and green onions for colour and freshness.
18. Serve maple flavoured pancake syrup and extra hot sauce at the table.
