Hearty Lamb Stew - ★Cooking Recipes★

Directions for: Hearty Lamb Stew

Ingredients

2 lb(s) leg of lamb, trimmed and cubed

cup olive oil

1 Tbsp fresh garlic, minced

1 Tbsp fresh rosemary, chopped

salt and pepper to taste

1 small yellow onion, 1/2-inch diced

1 carrot, roughly chopped

1 25 oz can crushed tomatoes and juice

cup white wine

4 cup beef stock

1 potato, 1-inch diced

1 sweet potato, 1-inch diced

Directions

1. Preheat oven to 325 degrees Fahrenheit.

2. Toss lamb in olive oil, garlic, rosemary, salt and pepper to taste.

3. In a large pot at medium heat add the seasoned lamb and brown.

4. Add onions, carrots, and saut until onions caramelized.

5. Add crushed tomatoes and wine, let reduce by half

6. Add beef stock.

7. Place the stew in oven and let simmer for 1 hour.

8. Add the potatoes and continue to simmer until both lamb and potatoes are tender, approximately 1 to 1.5 hours.

9. Stew is best served with warm, crusty bread.
