Directions for: Charlie Mac Dog
Ingredients
Cheesy Bchamel4 oz butter
cup flour
3 cups warm milk
cup Parmesan cheese, shredded
cup Mozzarella, shredded
cup Cheddar cheese, shredded
1 tsp Tabasco sauce
pinch white pepper
Macaroni Noodles4 cups water
1 cup macaroni noodles
⅛ cup canola oil
The Dog6 hot dog buns
6 hot dogs
6 strips bacon, cooked
Macaroni Noodles (above)
Cheesy Bchamel (above)
cup Cheddar cheese, finely shredded
Directions
Cheesy Bchamel1. In a medium sized pot, melt butter and slowly stir in flour to make a roux. Cook for 7 minutes, then slowly add the warm milk while continuing to whisk the roux. Whisk for 3 more minutes.
2. Add all three cheeses and stir until they are all melted.
3. Season with Tabasco and white pepper (dont add salt).
4. For extra flavor, add 1 tablespoons of chicken or mushroom stock to the roux (optional).
Macaroni Noodles1. Bring 4 cups of water to a boil. Add the macaroni and stir continuously for 7 minutes so the pasta doesnt stick.
2. Strain out the water and stir in the canola oil ONLY if you arent going to use the noodles right away.
The Dog1. Steam the hot dog buns until they are soft to the touch. Boil the hot dogs for 5 minutes. Place the cooked hot dog inside the bun.
2. Place a cooked bacon strip to one side of the hot dog. Put a layer of cooked macaroni atop the hot dog. With a ladle, evenly distribute about 3 ounces of the cheesy bchamel on top of the macaroni. Sprinkle the finely shredded cheddar cheese on top of the bchamel. Melt the cheddar cheese by toasting the assembled dog for 30 seconds.
