Pacific Waffle Sandwich - ★Cooking Recipes★

Directions for: Pacific Waffle Sandwich

Ingredients

Avocado Mayo

1 ripe avocado, pitted

1 cup mayonnaise

1 Tbsp lemon juice

1 Tbsp salt

1 tsp black pepper

1 tsp sugar

Quinoa Dill Waffles

5 cups flour

1 cup cooked quinoa

tsp sugar

tsp salt

tsp pepper

bunch fresh dill, chopped

1 Tbsp baking powder

Tbsp baking soda

3 cups buttermilk

2 cups 10% cream

2 eggs

Assembly

4 - 6 Tbsp goat cheese

4 - 6 eggs

1 - 2 red onions, sliced

16 - 20 slices smoked salmon

Directions

Avocado Mayo

1. Add avocado, mayonnaise, lemon juice, salt, pepper, and sugar to a food processor; process until smooth.

Quinoa Dill Waffles

1. Preheat waffle iron.

2. In a large bowl, mix together all dry ingredients; whisk wet ingredients into the flour until fully incorporated.

3. Ladle batter into the hot waffle iron and cook until lightly golden.

4. While waffles cook, fry one egg per sandwich in a medium pan until whites are solid.

Assembly

1. Top one waffle per sandwich with 1 tablespoon of goat cheese, 4 slices smoked salmon, and 1/8 cup sliced red onions. Add one fried egg on top and a drizzle with avocado mayonnaise.

2. Close sandwich with a second waffle, slice on the diagonal and serve.
