Everything you love about burritos is inside this one! Beans, rice, veggies, cheese, guac and fresh parsley, all wrapped in white tortillas.
Directions for: Mexican All Star Burrito
Ingredients
3 large white tortillas
cup cheese spread
1 cup cooked rice
cup kidney beans
2 hard taco shells
4 Tbsp salsa
1 cup iceberg lettuce, shredded
1 tamale, store bought without husks
2 cups refried beans
1 Tbsp oil
1 Tbsp sour cream
1 Tbsp guacamole
1 sprig parsley
Directions
1. Preheat griddle to 350F (175C). Preheat oven to 350F.
2. On a baking sheet, place down the 3 tortillas, overlapping them slightly to create one large tortilla. Spread cheese spread over the tortillas and on the overlapping edges to stick them together. Spread the rice and kidney beans over the top, leaving a 1/2inch edge.
3. Take the hard taco shells and place the lettuce and 2 tablespoons of the salsa inside. Face the openings toward each other and place the tamale on the inside. Press the tacos together. Place down on the centre of the tortillas. Spread the refried beans liberally over the top of the hard shell taco.
4. Fold the edges of the tortillas over the centre of the hard shell tacos. Place 1 tablespoon of oil on the griddle. Place the burrito folded side down onto the griddle and sear for 3-5 minutes. Flip and sear the other side.
5. Place the burrito on a baking sheet and bake for 15 minutes. Remove and garnish with sour cream, salsa, guacamole, and a parsley sprig.
